Overview
The SP55 is a double-sided diamond plate mounted on a universal holder. It measures 28 cm by 6,5 cm and is 8 mm thick, with 400 grit on the front and 1000 grit on the back. Length matters as much as grit here: 28 cm let a kitchen blade travel its whole length in one movement, without having to sharpen it in sections. The universal holder will also take a coticule stone if you already own one.
A holder that outlives its own plate
The supplied holder is described as universal, and that is where the SP55 reaches beyond its own abrasive. It keeps the plate in place while you push the blade, but it also accepts a coticule stone, which makes it the base of a sharpening station you can grow: shape on 400 grit diamond, refine on 1000, then finish on a finer stone set in the same place, at the same working height. One base, several abrasives, and a hand that keeps its bearings throughout.

Care
Rinse each face after sharpening to remove the metal particles, including the one you used first. Wipe the plate, then let it dry off the holder before storing it, so that moisture is not trapped between the two parts. The universal holder itself is cleaned under clean water too, especially if you have set a water stone on it and left sharpening slurry behind on the bearing surfaces.
