Max Knives SP54 — Five-function diamond sharpener, 400 and 1000 grit

Overview

The SP54 gathers most of a sharpening station onto one 28 cm block. Its two diamond faces split the work: 400 grit for shaping, 1000 grit for finishing, over a sharpening area of 150 x 50 mm. Added to that are a ceramic scissor sharpener and a crossed tungsten sharpener, which makes five functions in an object that stays on the worktop and can be picked up with one hand when needed.

Shaping on one side, finishing on the other

The split between the two faces tells the whole method. You start on the 400 grit, the one that removes metal and rebuilds the bevel while the blade still refuses to bite. You move to the 1000 grit only afterwards, to erase the marks left by the 400 and refine the edge. Turning the block over means changing stage without changing tool. And because scissors are not treated like a straight blade, two separate stations are set aside for them: ceramic for scissors, crossed tungsten for quick touch-ups.

Care

Rinse both diamond faces after use to flush the filings away, then wipe the block and let it dry with the faces upward. Clean the ceramic scissor sharpener and the crossed tungsten sharpener as well, since particles can stay lodged in the hollow of the V. Store the block flat and dry, and avoid stacking metal objects on top of it that would rub against the abrasive surfaces over time.
