Fred Perrin FP1904 Fruit Knife — Hawkbill Blade, 440C Stonewash, Kydex Sheath

A design born from one precise use

Fred Perrin always starts from a real need rather than a shape. Here the need is domestic: peeling a fruit, removing a stem, quartering an apple. The answer is a hawkbill blade — a hooked profile whose concave edge catches material and draws it into the blade instead of sliding off it. It is the geometry found on gardeners' pruning knives, for exactly the same reason.

Technical details

440C hawkbill blade, stonewash finish, plain edge, 40 mm long and 3.2 mm thick. One-piece 440C construction, handle drilled with five holes for a paracord lanyard. Overall length 130 mm. Weight 60 g. Kydex sheath included.

One hundred and thirty millimetres, sixty grams

This is the size of a knife you take with you: in a hiking pack, a picnic box, a kitchen drawer or a bag. The five holes in the handle let you fit a paracord lanyard at whatever length and colour you like — a detail typical of Fred Perrin's work, where nothing is decorative.

The stonewash finish

Stonewash is a surface treatment produced by tumbling: the steel comes out matte, textured with even micro-marks. Its merit is as practical as it is aesthetic — that texture absorbs the marks of use and gives the blade a look that improves over time.

Care

440C rinses and wipes after food use, like any kitchen knife. A hawkbill blade sharpens on a round-section fine stone or a steel, following the curve — a flat sharpener cannot reach into the concave edge.
